Spring Salmon Recipe

Americans love their red meat! In fact, when summer comes around, you can smell the aroma of steaks grilling on an open flame all over the place. Sometimes, the red steak gets replaced by its more delicate rival...chicken. But it is springtime! So what about getting the jump on the usual suspects and try to cook another type of meat over the fire? Say fish, for example. Here’s a lovely salmon recipe with a soy sauce and brown sugar marinade that will leave your appetites fishing for more!

Ingredients:

1 ½ pounds salmon filets
Lemon pepper to taste
Garlic powder to taste
Salt to taste
1/3 cup of soy sauce
1/3 cup of brown sugar
1/3 cup of water
¼ cup of vegetable oil

Directions:

1-Season your salmon fillets with lemon pepper, garlic powder, and salt.
2-In a small bowl, stir together soy sauce, brown sugar, water and vegetable oil until sugar is dissolved. Place your salmon pieces in a large resalable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours. If you have time, make this the day before and leave in the fridge to get a really deep taste!
3-Preheat the grill for medium heat. Be sure to scrub any residue from other meals off the grill before you put the salmon on.
4-Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until fish flakes easily with a fork.

If you’re planning to serve up some summer veggies as a side dish for your salmon, make sure you prepare them on a cutting board reserved solely for handling vegetables, or before you prepare your meat.
