That wonderful smell ladies and gentlemen is not only spring in the air, but the smell of nachos, chips and many finger foods. Spring is not only equated to melting snow, longer days and warmer sun, but spring, means…March Madness!!!

March Madness is a time where people everywhere who may not typically follow College Basketball become frenzied as the USA TV networks show us talented student athletes battling for the ultimate goal in NCAA basketball: a trip to the Final Four!

March Madness Snacks

Much like the Super Bowl, The Final Four is a time of gathering with friends and family to enjoy watching some very good basketball while indulging in some fun snacks! To enable you to focus on the games as opposed to standing over your large wooden cutting board preparing food, we have come up with a wonderful snack that can be made ahead of time.

Nachos & guacamole

Guacamole is a dip that is made from avocados and the secret to delicious guacamole is ripe avocados. (A ripe avocado will give a little when you press the skin.)

The ingredients are quite simple:

2 ripe avocados, cubed
1/2 red onion, finely chopped
1 tablespoon of fresh lime or lemon juice
Salt and pepper to taste
1/2 ripe tomato, seeds and pulp removed, chopped
1/2 (or more to your taste) jalapeno pepper, seeds removed, finely chopped

So gather your ingredients, a sharp knife and your wood cutting board:

  1. Cut avocados in half. Remove the pit. Scoop out the flesh with a spoon and chop on your cutting board into small cubes. Place in a mixing bowl.
  2. Finely chop the onion and add it to the avocado.
  3. Add the lemon or lime, salt and pepper and mix.
  4. Chop and seed the tomatoes. Set aside.
  5. Carefully, slice the pepper on your cutting board, removing the seeds. Add a little pepper at a time as the hotness varies and you will not be able to “cool down” your recipe if you have added too much! Mix in and taste as you go.
  6. Carefully wash your cutting boards AND your hands as the hotness of the pepper is very prevailing.
  7. Tightly cover the bowl in plastic wrap. Refrigerate until ready to serve.
  8. Add the tomatoes just prior to serving and mix.

Serve with tortilla chips, sit down and enjoy the Road to the Final Four!
