Cutting Board Winter Salsa Recipe

There is nothing like the long winter months to bring us together and yearn for a cozy afternoon cuddled by the fire watching our favourite movie and munching on “feel good” food.

I first tasted this recipe at a friend’s house during Super Bowl XXXIX in 2005. Sarah’s beloved Patriots were taking on the Philadelphia Eagles. The day was a success! Sarah’s Pats defeated the Eagles by a score of 20-17 to become the first team since the 1997–98 Denver Broncos to win consecutive Super Bowls AND I discovered the best salsa known to man AND woman!

Not only is this the best salsa you will likely ever taste, it is easy to make and healthy! There are a few things that are essential for this recipe to be a success…a sharp chef’s knife, a large wooden cutting board and time…do not rush the salsa!

Ingredients

1 can (28 oz) diced tomatoes
1 can (14 oz) tomato sauce
3 sticks of celery finely choppedSalsa cutting board
2 onions finely chopped
2 minced garlic bulbs
1 jalapeno pepper finely chopped (removed the seeds for a less potent flavour)
1/3 cup of white sugar
¼ cup of cider vinegar
¼ cup of lime juice
½ tsp pepper
½ tsp salt
1 ½ tsp of basil
½ tbsp of vegetable oil

Tools

Chef’s knife
Chopping board
Large pot

Preparation

Preheat the oil in the large pot
Wash and prep the celery sticks and the garlic bulbs
Slice and dice the celery and onions on your rectangular cutting board
Crush the garlic bulbs using you knife and your cutting board
Finely chop the garlic
Add the onions, celery and garlic to the warmed oil
Simmer for 5 minutes
Add the remaining ingredients
Simmer uncovered for 2 – 3 hours
Remove from heat; allow the salsa to cool
